I have a growing fascination for the music of bassist/producer Bill Laswell. He is very prolific, having been involved in one way or another with more than 500 albums, and works in a wide range of genres, from ambient to dub to jazz to noise rock. His specialty is "collision music," bringing together musicians from divergent backgrounds to create something new. I particularly like some of his dub albums (like Dub Chamber 3) and his Indian-influenced albums (like Tabla Beat Science's Tala Matrix).
